Tropical French toast
French toast is a must-have at least once per week. This is my go-to recipe. I love the sweetness of the honey combined with the flavors of the coconut and cinnamon that give that tropical vibe.

Ingredients
- ⅓ cup coconut milk
- 2 eggs
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla essence
- 1 teaspoon cinnamon powder
- coconut oil/cooking spray, to grease pan
- 6 slices cinnamon raisin bread
- 3 tablespoons honey, to drizzle
- Fresh fruits to garnish
Directions
Whisk together coconut milk, eggs, sugar, salt, vanilla and cinnamon in a medium sized mixing bowl. Set aside.
Heat coconut oil in a large frying pan over medium heat. Dip bread into the egg mixture and allow to soak for 10 seconds on each side. Remove to a plate and allow to sit for 1 to 2 minutes. Drizzle with honey and serve with fruits if desired.
